Running a different seasoning regimen on this 17lb brisket that’ll hit the smoker about 9 tonight. If it ends up damn good I’ll patent the seasoning, if it ends up like a turd you’ll never hear another word about this brisket.

Ordered another small version of the OLD SMOKEY GRILL.

Used some charcoal chunks, a lil mesquite, and a block of pecan. It did a good job, yet my patience ran short and finished the last 35 minutes in the convection oven.

A few wings, country ribs, and some cheddar brats. Mighty tasty & not overly smokey. For the longest time I couldn't seem to get the temperature above 200. Yet, I go out an hr and 1/2 later to check and see if its died down and the freaking things rolling along @ 325 degrees!😬😬🤣🤣

Tonight on the grill is 200-300 steaks for the steak fry. In the morning 6 racks of baby backs for my nieces birthday party in the afternoon. The kids will have pizza but I offered to smoke something and my sister in law asked for ribs.

About 250 steaks tonight. Not sure on the temp inside the cooking area but the heat index outside was 108ish and I’m wiped. Trying to cool down slowly now that I’m home so I don’t end up sick. The ribs are ready for tomorrow and I’m hoping to be up and have them on by 7 tomorrow.
