Can’t even slice it open for a pic and a sample!?
It was tempting to lop off a hunk but I resisted. I like to let it set up before slicing.
I'll post some pics when I slice it tomorrow.

Here you go. I sliced the end off of the smaller piece. Was just going to take a pic but ended up with a few slices on a piece of soft rye with some Mustard. It didn't disappoint.

How do you "steam"?
I use a large disposable roasting pan with a raised rack in the bottom. I put water in the pan, put the meat on the rack and seal tightly with heavy duty aluminum foil. It goes in a 240* oven or back on the smoker/grill until the meat reaches the target temp.
Here's a pic of the one I used. It still needs to be washed. I buy them at Sam's or Costco and use the extra wide heavy duty aluminum foil to cover and seal. I can generally use them two or three times before replacing. Works well.
