I understand. I'm med/rare with a good steak or Prime Rib but I can't eat a thick burger cooked to anything beyond rare. I think it's from being served too many severely overcooked burgers growing up. No one in my family knew how to grill a burger to anything less than well done.Interesting thought about meat. I have a couple hunks of brisket that's been in Corning brine, that's going to get rolled in cracked black pepper and smoked then steamed, on the smoker.Checking in to see if you guys have any interesting cooking plans for Memorial Day (or the extended days around this important day?)

When I was a kid, I would eat a raw hamburger while cooking a hamburger in a frying pan. Not anymore though.
In some countries (like Turkey) raw hamburger, with spices and lemon juice, is rolled up into balls and served as an appetizer.
Do you cook them whole of Spatchcock them?
