Interesting thought about meat. I cannot eat mine mooing. Although I don't mind some pink. Nice looking burgers.
I understand. I'm med/rare with a good steak or Prime Rib but I can't eat a thick burger cooked to anything beyond rare. I think it's from being served too many severely overcooked burgers growing up. No one in my family knew how to grill a burger to anything less than well done.

Yes, I'm not into the well done burger thing. A tightly packed burger that has been cooked to death has no appeal to me. Sometimes a family member or 2 come to the grill when I am doing burgers. If they absolutely insist on a well done burger I cook it "their way" --otherwise I encourage them to let me do the cooking. So far there have been little complaints. But, there are always a few in every crowd.
Now you got me thinking about cooking burgers. :D

1/2 lb burgers. Med/well for my wife, just north of raw for me.
If God had intended for us to eat gray meat, he would have made us all color blind.

Bloody red is good!! Everybody likes to over cook meat.

When I was a kid, I would eat a raw hamburger while cooking a hamburger in a frying pan. Not anymore though.

In some countries (like Turkey) raw hamburger, with spices and lemon juice, is rolled up into balls and served as an appetizer.

I have a couple hunks of brisket that's been in Corning brine, that's going to get rolled in cracked black pepper and smoked then steamed, on the smoker.
Was supposed the be on an honor flight to D.C. today with my dad but he's in the hospital and we're going to have to reschedule. My dad loves this stuff. It's not much of a consolation prize but It'll have to do.

Just went out and took a whole chicken out of the freezer. Been a while since I did one on the grill

Salt shaker, and home ground beef, Raw is good to me. Don't forget the salt!! 1 tsp per lb. Then you can eat two lbs.

If you eat raw meat, you need to eat salt!!

Do you cook them whole of Spatchcock them?

posted pic looks whole (Deetz is rocking the ceramic on another cook).

Although I have seen a few spatch-cock birds and can't wait to do one this way. Good idea.
A friend of mine does turkeys that way and they are marvelous.
