I just started getting my learn on with sharpening in the past few weeks. Picked up a couple of Shapton ceramic stones off of Amazon, the 1k and the 5k. Planning on my next purchase being a 400-ish grit diamond "stone" for flattening the stones and heavy edge/bevel repair.
I'm doing alright on straighter edges like cleavers and Santoku style kitchen knives, but having trouble with the swept up portion of drop points and chef's knives. Any tips?
