I don't think you want to use stainless. It will put chromium into the solution,....and then how will you dispose of it?
i talked to a chemist about that and he said that at low voltage and low heat that the amount of hexchrome would be so tiny that it would not be an issue

I have a 45 gallon plastic barrel where I have hung 4 strips of stainless steel I cut from a fridge door a old style constant amp battery charger. I had a 6 amp and a 3 amp and noticed no difference in time it took to remove everything from cast iron, saw chains, bars, rusty tools ect. I used two tablespoons of soda carbonate to a gallon of water

Stainless dosnt disappear like other metals, that’s what was recommended with the research I did
No worries about disposal around here

it does make toxic water if there is enough voltage and heat. thats why low voltage and high amps. if you have high volts and high amps it will heat the water and the stainless will make hexchrome in the water

Reading several comments above, Begs (Begets) the query,
Heated or cold water work better? I was/am thinking of setting it out in the sun next summer.
Will be a wood sided plastic lined box.
More water volume better than just enough?
Just testing the water for opinions and experiences.

i made my tank out of a beer keg because i wanted a tank small enough that it was easy to move around. i made a base with wheels so i could roll it around when it has water in it. i dont have to mess with finding metal to put in it because the whole thing is stainless. i was just putting cast iron skillets in it.

if you put that vise in a tank it will not work as good on the inside where the screw is. it is line of site. and it will take the paint off too.
