Next one up is just a Mercer and a choice. The choice seems to be the better but I never put a good edge on the Mercer. They’re both the types of knives regular restaurants provide Good knives but cheap knives
Last one up there is Japanese stainless over a carbon core. It’s rusted and gets that way pretty regular. I don’t use it much at all but it is cool and does hold a nice edge
Then my folding pocket knives. That is a different brand green one than the one I posted before
I’ve got several other kitchen knives but they get put out of sight and I’m not
