It's rare to need more than E7018 for most structural welding.

Should I stick to that for say, a frame? Exhaust? What about spot welds for bodywork?

My son got certified in alot of different rods one of those is 7018 which he used the most at the time for structural.

Frame yes
Exhaust nothing better than a coat hanger and a torch
1/16" E6013 is good for exhaust and body work. Wire welder is best for body.
