Its been years since I've smoked with a sidebox smoker. This thing held temp all night with just a one addition of wood.
Now to find a hickory tree....

Mine's electric, so I'm not sure, but I think thats how they were designed, wood chips over charcoal. Large flames from firewood sized pieces would be way too hotOr charcoal with wood chunks added.

I used charcoal to get things rolling and then added hickory logs from then on that a buddy gave me to try.
I picked up a fair amount of hickory, apple and cherry from him yesterday.
When we to to Texas next month I'm taking a saw with me and am going to fill the truck bed with misquite. If I get ambitious I may build a box on a pallet and fill it with misquite and look for a fastenal to ship it up here.
I use apple and cherry for pork. Hickory, apple, and cherry for fish. Beef? Nfi. Never done it
I cooked steak-on-a-stick about 20 years ago over a pine 2x4 fire. Best steak I had all dayAlder is great for fish (especially salmon). Mesquite for beef.
Steaks cooked over an open tamarack fire (western larch) have an amazing flavor, and totally unique.

I dont have a smoker yet, but ill throw some chunks in an pan off to the side of the grill to add some smoke. Any you fellas running any electric smokers? Recommendations?Use a little bit of hickory and the rest oak is what I do. Works for cooking steaks over too with just a little added flavor.
