I’ve got beef short ribs sitting in the fridge that I’ll be putting on in a while. I best get them out to warm up though. Are you doing pulled beef and pork? They look tasty.

Pulled pork for sure, not sure with the English roast, will try to slice it like a smoked brisket. This is my first time with a smoker, so jumping in with both feet.

That is what I did when I got my big smoker. So far everything has turned out good enough to eat.

Been watching videos and it seems you almost can't do it wrong if you watch the temperatures. I am glad I went with pellets. I did not want to be tied to pellets, but it is pretty easy. Which is right up my alley. Temps climbed to 200 so I put them still wrapped in a warm oven. Going to save the bird until next weekend. There is only two of us here.
