Things I learned today about smoking. I won't be smoking meat overnight again, unless it is for breakfast. Also, will not wait for guests to arrive to eat. Waiting all day allowed the meat to not be as juicy. It was fantastic, but would have been way better with more moisture. Looking forward to lunch tomorrow. I love smoking meat. Thank you to all that made suggestions, they were all valuable.

Evening all. Set a new personal best in the kayak, did 99 mins and covered some new parts of the marsh that I hadn’t been down before. Might have to pull up a sat map and try and figure out the distance but I turned around when I would have had to get out and portage over the highway.
