I like these except for .58 gauge *B-S....

It depends, I go the other way, from 50ga to 58ga.
Normally bars are the same thickness, 50 or 58ga, easier to use wedges etc with 58 versus 50. Better lubrication too.

Fingers crossed for sure. Are you going to baste them with melted beef tallow as they smoke? My cousin has done that before. Results were phenomenal.
