I do Mark, but it's not something I can "Martha Stewart" together for you.
Heres my bestest redneck effort;
You need yellow cornmeal.
Pour some in a 2 or 3 quart bowl. About half full. (Trust me, you want at least this many, whether you have 2 people or 6)
Next, crack an egg in there and give it a stir. You can crack two. Wont hurt. Its just a binder.
Now, chop up a white or purple onion. A big one. Use a food processor or rotary chopper/blender. (Dont use sweet onions, they dont convey the flavor).
If you like onions, chop up two. If you like hot stuff, substitute enough jalapeno peppers to make up the second onion. Chop those.
This step is IMPORTANT.
Take the onions and peppers you just chopped up and squeeze them between layers of paper towels.
This takes some of the water out of the onions. If you don't, the mix gets really "wet" once it sits for a few minutes.
There will still be plenty of flavor, even after blotting the wet ingredients.
Once thats done, combine the onions/peppers(some like to add drained, blotted whole kernel corn to this, but I don't) with the corn meal.
Mix all that together, then add beer or buttermilk to a thick consistency that can just be gathered in a teaspoon or tablespoon. Add black pepper to taste as well.
Drop this mixture into 350 degree deep fat oil and cook until golden brown on all sides. These May turn themselves when they have been down for a minute, or may need some help. Either way, let both sides get some down time. Take up and drain for a minute on paper towels before enjoying. Best with fresh fried fish and French fried potatoes, but good by themselves, with ketchup, or your favorite hot sauce. Bosslady even likes them the next day cold.(not my thing).
