Fillets are in their future I'd guess, or do you have other tricks?
Fillets for the fussy eaters, and the Out-laws hot smoke the bigger heads and wings for smoked fish pies and the like. Barbecue fried backbones don't suck either.

That doesnt sound bad to me.
I dont mind the good stuff people come up with by taking a little time to use all thats given. Good stuff.
On the other hand, if I catch a nice mess of crappie(speckled perch), I'm gonna fillet those and deep fry them, along with some fried potatoes and what we call "hushpuppies"(spoon-size corn bread fritters full of onions and possibly jalapeno peppers).
That way, I can shove a large amount down the hatch in a short period of time. Kinda like popcorn...
Gotta limit that goodness to once a year, or my cardiologist gets REALLY pissed. :D

Innuendo or actual?

These are our Golden Snapper, these ones lived over sand so are pretty light coloured whereas the reef dwellers are much darker, purpley even.
We also have Red Snapper, but they live much deeper and aren't caught by me as often. I'll pic some if so.

Ive caught Mangrove snapper off the Atlantic coast of Florida. Those were close in color to what you have, but a bit more to the orange side of it. Still pretty tasty, and not a lot of the "fishy" taste.

Crumbed shallow fried Snapper or Tarakihi fillets, par-boiled then roasted and smashed tatoes and a crisp green salad my fave. And a lager.

Invite your heart doctor over, he might see the benefits...
