How you know when to dig them. I have some in the ground
Some years they get as big as footballs so I dig them before that. The ground starts swelling like its gonna erupt yams and you can feel around on the tops of em and know they big. Whenever the plant starts dying back tho is a good indication. In the south they spray and kill em at a certain stage to keep the roots #1 grade.
