I used bench grinders for many years. Somewhere over the years I picked up a variable speed side grinder.
I clamp the blade to the outside workbench and set the trigger screw to slow the grinder down. You'll still easily blue the blade if you aren't gentle with the grinder.
After that, I'll grab a 12" mill file to do touch ups a few times.
Do a few touch ups with the file and then get the grinder out to get the blade angle back where it's not too steep again.
I try to do all of my grinding and sanding outside. Having that grit and metal dust getting into everything eventually got old for me.
