Well the good news we have more Guatemala, Congo, and Honduras on it's way. As well as the Costa Rica and Tanzania. It should be here the end of next week.

Oh Ya both the Congo and Guatemalan are excellent dark roasts. My wife loves the Congo she says it has a hint of cinnamon like the red cinnamon disks .
I like the Guatemalan a bit better little more chocolate hints

The Honduras is really nice it is a medium roast so has a bit more caffeine but still has a lot of the characteristics of a dark roast but very smooth.

If the Honduras is anything like the Brazil then I might go with the Costa Rica or Tanzania

Honduras is not quite as bright and has less acidity.
As soon as I get the Tanzania and Costa Rica I will build a roast profile and let you all know how they are. However by the region and Altitude they both will probably be best at a light to medium roast.

I will roast it early Tuesday morning and ship it out in the afternoon that way you get the freshest coffee possible.
