I can the trout and salmon that aren't as fresh. Pale riders I call them. Mix some Hellman's in after makes sandwich spread I eat it alot every other day can't get enough.

We had snow at the ski resorts here yesterday. Very odd for Greece in May.

Do you use cans or jars, Gunner? I canned some trout using jars in the pressure pot and we've been eating it as a tuna substitute.

I'm hoping to get some Bonito and can it this summer and fall. Tuna runs in August - Sept at the north of the island.
