A buddy and I hit a 12lb’er with the prop one afternoon up in the Netley marsh. It fed 5 of us for supper that night

Haven't been to Canada fishing in about 14 years but loved fresh walleye for lunch and dinner. Fan of Perch too.

Those look like they have nitrate in them. Not that that's a bad thing. We have a shop up in Plainwell that's my go to for flavored brats. Pineapple is pretty much the universal favorite, but I'm a sucker for green pepper and onion. There's a small butcher up that way that does some specialty stuff. A few years back I had him make me a five lb. ring of andouille with nitrate in so I could cold smoke it. Next year i need to hit him up to do a batch of ramp brats.

Best I can find is Jalapeno cheddar at the meat market in Swainsboro. Good stuff. Their fresh link sausage is off the chain slow grilled.

That will clean up just fine.
0000 steel wool. Brill-o pads with the soap work really well. Just make sure its the 0000.
Ace Hardware used to sell the replacement grates. May be better than ordering and risking UPS folding it like a taco.
Ive burned a metric *s-wordton of groceries on one of those.
Favorite was deer camp pork chops. Cooked the cheap family packs of center cut chops hot and fast, then tossed them into a cheap cooler lined with foil and flooded with Stricklands BBQ sauce. Simple and damn fine eatin!
