I've done several intake manifolds and head gaskets on them. Dexcool killed them.

Intake gaskets were more from the bolts loosening up and expansion/contraction. I'd bet the corner bolts were loose.
The new gaskets with the steel inserts solved the problem.
Head gaskets, well, that was more likely poor cleaning of the blocks after casting and machining. That combined with the Dexcool made sludge.
Still use Dexcool and now that we are out of the 1990's, we don't see any issues like we did then, but I could be wrong.

@dall as have a look at this if you get time bro. Old YT mate built a flat deck. I'm thinking the deck plate joins shoulda been on cross-members not hanging free, and i'm sure you'll pick up a few other potential alternative fab methods.

i watched it also when first made the video
theres a few things i wouldnt have done
the welds at corners have little structure
same thing along the bed
it is more for looks id say than anything
even the cm beds have extra bracing around the bottom of the sides and rear steps as bracing
if he would drag that one or back into something he is going to bend it up

I might just buy gas. No turbo no injection pump, no intercooler yadda yadda. Less maint and repairs if it blows up.

The business is underground sprinkler design, installation and repair. The boss man tree accident unrelated.
