I don't hunt nor do I have any real interest in doing so, but my understanding was that you gotta gut the deer right away or it will spoil the meat.

For the most part yes, weather plays the biggest factor in that…but if you have to make a running shot and by chance end up gut-shooting ‘em you need to get the guts out of ‘em quick-like.
