Looks fantastic, what do use for curdling? Rennet? Or something else?Coming along very nicely. We cut it and now it’s sitting with coarse sea salt for 24 hours. We’ll clean it and brine tomorrow.

Nearly done with the feta. Tomorrow it goes in brine. The dogs should be happy to get some whey on their food.

Beef or milk? How big is your papa cow? Neighbors here have limousine cattle, picking mine up from freezer school tomorrow. Processing has been an issue around us, and we lost one in Vonore.We have small flat spots with vertical drop offs down to each creek bed. The Cumberland Plateau is "different".
Cows? I have 40 momma cows.
Took a year here, now they are 6 months. Good thing venison is abundant, I hate beef from the grocery store, and refuse to buy it.It is here too
