Beef or milk? How big is your papa cow? Neighbors here have limousine cattle, picking mine up from freezer school tomorrow. Processing has been an issue around us, and we lost one in Vonore.

Beefers. We have two bulls. One is an Angus.....we run the young stuff with him till they are bred with their second calf. Then we move them in with a Hereford bull.

Good morning, went and slept in this morning, good thing I back filled the stove last night with some shorts, knots and crotches. A little trick I picked up from @USMC615 even the rottenest of crotches can help keep you warm on a cold winters night! Lol

So along with teaching Jason about BBQ yesterday I did a couple of batches of bone broth in the pressure cooker. Pork neck bones, mirepoix, garlic, and a couple spices. Just skimmed it and packaged for the freezer. Should make for some good ramen noodle soup with some chicken or pork and vegetables. Or straight up if I contract this crud that everyone seems to be getting.

Looks fantastic, what do use for curdling? Rennet? Or something else?

Rennet is what we used. It's in powder form. We added at 35 degrees Celsius and let it sit near to 1.5 hours.

Do you find cheese affects your lactose intolerance? All the lactose is in the whey, the curd are supposed to not contain lactose. Looks great. I might have to try my hand at making some.

there is a family owned grocery store not too far away that will butcher you anything you want fresh no additives like the walmart garbage
they will even do half or whole animals as well for about what youd pay for burger at the other *s-word stores

I never ran out, though I was rationing towards the end. Still have roasts, and the wife found some steaks in the bottom of one of the freezers. So life is good. My neighbor charges $3/lb hanging weight. He doesn't charge me that much as we help each other out, but I make him charge me something, as he has some costs.

Life is good when you feel you owe your neighbors, and they feel they owe you.
