My TN buddy and I did a brisket in his barrel smoker with mequite....low and slow at 205-215, mopped every hour on the hour wif a vingar based moppy sauce. 16 hours and too much beer later, holy smokes I've never eaten anything so good!
Basically, the "Mopping" I grew up around was vinegar, melted butter, salt, and pepper. Not usually used on pork barbeque. We did occasionally spray or "mop" a whole hog with vinegar and salt water.
The mopping was used when my grandmother cooked goat or deer meat.
Not a True barbeque, as there was no wood fire or smoke, but man, it was GOOD.
They just pressure cooked the tougher cuts, then chopped the meat. Put in a baking pan and mopped with the sauce as it was slow cooked in the oven covered in foil for several hours.
Poor folks barbeque.

I've been lougling all these foods....Red Beans on rice sounds all good!!

Just had Turkish flat bread wrap filled with rotisserie cooked lamb and salad for lunch. Yes ma'am!
Red beans and rice and best accompanied with deer sausage :cool:

We don't have pecan here
I know where there's a nice pecan tree at the Kellogg bird sanctuary ;) it's actually a member of the hickory family. I bet if a feller experimented with going lighter on the smoke they could get a similar outcome from the abundant bitternut hickory around here.
