Exactly how it is supposed to be, tender, delicious, and healthy! It was good!

Made it for my Father In Law once when he was still with us. He was from NYC, and did not hunt. Told me it was better than the best Filet Mignon he ever had.

At another party, several people insisted I cook some medium instead of rare. After they tasted both, everyone went for the rare. Venison is a very lean meat, and if you over cook it, it gets tough fast. It really does taste much better rare.

So on to the ongoing how do you prefer your meat cooked debate, a friend has been a big part of Louis Lunch in New Haven for many years and he will regale with us stories of people coming in and wanted well done burgers, why mess with the original burger place (1895) ?? They cook it in range of rare plus, always super juicy, lines out the door daily, they are doing something right.

Dallas has been very edgy lately. My wife use to like her food cooked well done and after years of grilling for her she now understands that some pink makes them much more tasty. On the flip side she will not touch the way I like my prime rib. When I grill at home they get cooked them same as I can get them to where she likes them and there just enough pink for me to be happy.
