Screaming hot chain? Maybe it's time to sharpen, or mod an oiler.
It can be sharp and oiling correctly and still do this. In the wintertime here, if you were to go straight from cutting our hardwoods to setting the saw down in the snow, it will harden the chain immediately. An old time logger taught me to keep my bar/chain out of the snow because of this. Takes a little awareness, but once you get used to it, you can usually find a way to set the saw down without the bar/chain touching the snow.

After long bucking cuts, and before shutting down the saw, I always hold the bar tip over a round and blip the throttle till excess oil sprays off the bar tip.
My logic is:
- the chain and bar groove get soaked in oil (lubing and cooling)
- the chain can take some excess heat away from the clutch (and as such the crank shaft and every neighboring parts)
- the chain moving around the bar allows it to air cool

People look at me with blank stares when I stand there and blip the throttle for 30-60 seconds before shutting the saw down - I just try to ignore them.

I do the same thing.
