Well a couple of reasons the bitterness is held at bay.Just put a cup of brazil thru the press,now that makes a cup of coffee!!!
Corey ,why no bitter after taste when brewin this way?
One our coffee is so fresh, and the way it is roasted helps.
Two when you brew manual you control the water temperature and steep time.
If your water temperature goes above 204 degree F you start to extract the bitterness. So the coffee gets smoother the lower you get but some will think it is week especially once you go below 195F
If you steep the coffee two long you can also get a bitterness.
Example. The goal for a drip coffee maker is the water temp to stay between 195-203F and to brew in understandable 7 min while getting the beans evenly and completely submerged for even extraction. Most drip brewers that actually do this start at $250 and go up in price very fast.
The filtering method also plays a role but impacts the body vs the cleanness, (how many particulates are allowed to pass into the coffee), as well as how much of the oils are allowed through.
But that is another discussion. French press verses the world! Lol
