I'm liking this pickled egg idea..

Where does one find giant jars of pickled eggs?
Or do I have to make them?

Cajun Pickled Eggs and Sausage
-20 Hard-Boiled Eggs, peeled and rinsed
-4 or smoked Andouille sausage links, cut into 1.5" chunks
-1 head garlic, separated and peeled
-4 bay leaves
-2 cups apple cider vinegar
-2 cups white vinegar
-2 cups water
-1/4 cup brown sugar (add a few Tablespoons more if you're not as into vinegar tartness as I am)
-3 Tablespoons Cajun seasoning, such as Old Bay -Red Chili flakes to taste

Bring the vinegars, water, brown sugar and seasonings to a boil in a large pot, just until everything dissolves. Remove from heat.

Layer the eggs, sausage chunks, bay leaves and garlic cloves in two 2-quart sealable jars. Pour the slightly-cooled brine over them, distributing evenly, so that everything is submerged. Seal and refrigerate at least overnight and up to 3 weeks. Eat with beer and friends who don't mind a little stank.

Couldn't a fellow just buy a gallon jar of pickled jalapeños, scoop about half of them out, and stuff the rest of the space with eggs shake them up and let them sit for a while?

I put a bunch of jalapeños in mine when there in season.......So yes you can and there great!
I really like the pickled jalapeños and onions out of the jar better than the eggs.

This batch was two dozen eggs
I don’t measure much just dump it in.
In the jar I cut up 4 onions and whatever jalapenos I can get at the time. Then put the eggs in.
Put a pot on the stove and boil all other stuff.
4 cups white vinegar
1 ½ cups sugar
Dried Cloves
Bay Leafs
Pickling Spice
Dried Red Pepper flakes
Dry Oregano
Garlic Cloves
Cumin Seeds
After I pour it into the jar and fill the rest of the way with water and more Vinegar. I keep them in my beer fridge out in the garage. Takes about a week for them to start to get pickled really good. I really just put whatever I have and like, most times there never the same.

I really like them like this way, the only part that I don't like. Is the Red Pepper Flakes turn the eggs a brown color after a week or so. They don't look the best but DAMM are they good.
You can tell how far the flavor has gone though them when you bite into them and see how far the brown color has gone into them.
