Beautiful day yesterday. Didn't catch a large number of fish but had a good time. Love doing hot breakfast on the bank especially with a start of 28° and frost. Several large hybrids caught yesterday between 5 and 10 lbs.
Yep. Made biscuits the night before to go with them. Needed to warm them up as well but beggars can't be choosers. I have never ate one but friend that I was fishing with cleaned one of the larger ones last year and said never again. Something about fatty meat on it. He was talking like the white meat itself was super fatty. He is very particular in how he cleans his fish so I know all the red is removed. Paddlefish are the same way with the red fatty bloodline. I am wondering if maybe he left the fillets a little thick and they didn't cook out right. I might have to clean a few and see myself.You talking like the red bloodline in them? I don't really know what to compare it to, rather distinct but several people say it tastes like chicken(everything tastes like chicken). Oily but smokes really nice though and then flakes apart. Fresher the better because it tends to get a bit gamey in the freezer after a while. Got a friend that soaks it in mustard water to take out the strong taste.What fish is a paddlefish comparable to taste wise? I might have a chance to go paddlefishen this year.

Thank you. I expected the meat to be oily. I'm guessing the smaller ones are better as well. Our rivers are pretty muddy, I'm sure that will affect the tast as well.
I'm not a big fan of chicken.... LOL
