Here’s a helluva 19-pc set of Zwilling/JA Henckels Twin Signature series knives I’ve had for a few years now. These are stamped vice forged, but all their ‘twin signature’ (two little stick men vice one) series knives are friodur ice-hardened after laser cut and stamped, or forged, to a 56/57 Rockwell strength, and just razor sharp with their 15 deg angled edges!

And if you wanna take the guesswork and time consumption out of individually sharpening knives on stones/wet stones, crock sticks, sharpening steels, etc...get a Chef’s Choice Trizor Edge 15 XV, 3-stage sharpener. Angle guides and internal springs maintain the absolute 15 deg angle throughout the 3 stages...stage 1 are aggressive diamond wheels, stage 2 are medium grit diamond wheels, stage 3 is a stropping/polishing set of discs! Chef’s Choice makes sharpeners for ‘western style’ 20 deg knives as well, as well as manual sharpeners in both 15 and 20 degs. I’ve converted all my old knives that were 20 degs to 15 degs over the years...and they just split hairs!

Jump on those Zwilling Pro 7” Chef’s Knives fellas while the gettin’s good...you won’t be disappointed! I’ve spent a damn lifetime figuring out what’s junk out there, and what works out there, like most of you folks have. Just giving you folks some advice on good purchases...I grew tired of buying chit yrs ago only to watch it end up in the landfill, and turn around and buy chit again. Those days have been over if I can afford otherwise...and these forged Zwilling Pro 7” Chef’s Knives are the ticket! I wouldn’t waste my time and put it on here if they weren’t, and the sharpener as well!
