I've always pumped everything down with a mixture of apple juice, white distilled vinegar or apple cider vinegar, and water. Some folks substitute the water portion with vodka as well. I'm thinking ribs for a few hours on the smoker. Then I'm gonna put some in a pan and dump kraut on top and cover it for a few more hours. That'll be some good chitI just use apple juice
