My brisket burned up. I'm thinking about a pellet smoker.
Randy lots of guys say it’s cheating and you don’t get the real flavor with a pellet grill. I for one do not believe this as I have a Pitboss and could not be happier. I’ve done a couple full briskets with great success. My neighbor is a charcoal Weber Smokey mountain smoker. I took him some of my ribs one day and he was very impressed with the smoke ring and flavor. I would recommend a pellet grill. This was my first full brisket on my pellet grill.

I love my big smoker. I've been able to make some really good smoked meat on it......but.

It's tough to get it just right in cold weather to do an all night burn. Last night it was at 237 when I went to bed. This morning it was cold because sometime during the night it took off and burned up the wood, and the brisket. Very disappointing.

I love my big smoker. I've been able to make some really good smoked meat on it......but.

It's tough to get it just right in cold weather to do an all night burn. Last night it was at 237 when I went to bed. This morning it was cold because sometime during the night it took off and burned up the wood, and the brisket. Very disappointing.
I know what you mean as I have friends that smoke with wood or charcoal and have this issue. I will say a pellet grill can still act up and cause issues. A friend was doing a pork butt over night and something went wrong and the fire went out and then the pellets kept going in and filled the bottom of the grill. Nothing is fool proof.
