I only used 1 hand!
This is just now, at the three hour mark. They're getting flipped meat side down with a bath of my TN buddy's wife's Chipotle bbq sauce. They get foiled with the sauce for two hours on the WSM, a rest in a cooler for the ride to the party, and then will come out about a half hour before game time. I used to do 3-2-1 like I do with spares but I found most of the time back ribs are falling apart after the foil and don't need any more time on the grate.Tim post some pictures of the meal when they are done on the smoker.

I did 3-2-1 my first time trying ribs. Now I do 225 for about 5 hours with mustard binder and holy voodoo rub. No sauce either. They have been my go to since I did them this way. Always mustard here too. I've been around the block with commercial and home made rubs. If I were competing i might care, but over coal with good wood chunks I never saw a hell of a lot of difference between all of them and the big tub of GFS bbq rub I use now, exclusively.
