Simple recipe. Three ingredients with the belly for a week. Hot smoke to 150 internal. I have a local podunk store slice it thin for frying. This one will be thick sliced by hand and some lardons cut.

Pork belly and eggs works for me.
Fresh diy bacon is hard to beat.

On the bolt fuggers, ive got a set. I try not to use them unless all other means fail.
We dont have to deal with the salt down here, so its rare that those come in to play, but when it does happen, they usually wont help much.
Ends up being a job for the "blue tool".

Cant be tight if its a fuggin liquid.
