it is called chalazae ! It is in unfertilized eggs as well. It holds the yolk in the center of the egg . the fresher the egg the more pronounced the chalazae. I keep 75 hens year round at the farm.My Mother-in-law says that the squiggly chit is Rooster cum.....
We have some white Leghorns that lay white eggs.
