Do you whip the fillets of each side Toenail or gut n gill and cook whole?

Fillet, they have a thick layer of red fatty meat that has to be removed before cooking. Usually fry or smoke them, they are an oily fish and smoke quite well. Filter feeders so you have to snag them in order to catch.
