Dang it!
A little bit overdone, or "chit, its on fire!" Overdone?
A little overdone. Not horrible....but not my best brisket by any means.
Too much smoke? If so, let it sit overnight. I tried Sugar maple wood once on chicken, it was terrible, but tasted great the next day.
After about 3 hours, I wrap it up to keep it from getting overly smoked. I just let it go too long.
