LMC has a catalog fir each series of trucks and brands. A 73-79 Ford, 68-72 Chevy ect. They even have full stainless replacement break lines with all the factory bends.

Largely depends on the vehicle though. Most trucks and muscle cars you can get just about anything. But my G Body Regal still doesn't have a lot of sheet metal reproduced and the stuff that is reproduced is either questionable quality or outrageously priced.
