I did this a couple weeks back. Overnight on a pellet grill on smoke setting then up to 325 till temperature was safe. Full of lemon butter garlic from Cajun injector. About 18 pounds. Wife don't like turkey so I had to handle it meseff. I did give away the legs and some breastisez to a buddy.
