I hear you and am working on it. When I do something for the first time I’m a little scared of F’ing up a *s-worde ton of meat.

Have you ever tried any of the coconut shell charcoal? There is a local guy importing it direct from Thailand. Pretty impressive stuff. Super long burn time and can get it really high if you want searing power. I’ve pegged the dome gauge when using the vortex.
