Vacation ideas during covid

My wife and I are trying to figure out some place to vacation for us and our 5 year old while being smart about covid. We are wanting to go somewhere that has plenty of outdoor activities like hiking trails or lakes with pontoon or paddle boat rentals. We definitely want something a little off the beaten path. We had discussed Mount Rushmore area but have heard its very crowded right now. Anyway what are some ideas that you know about?

Yeah we had thought about ozarks, might be a possibility if not too crowded right now.

We are going to Ledges state park this weekend
Lots of trails and nice creek for the kids to play in
No big water though

Its really pretty but may not be now after the Derecho

Lake Superior north shore is out of the way.
Lots of hiking trails, waterfalls, etc
Will likely be a bit much for a 5 year old though.
My girls were a bit older when we did it.

Edit, I take that back, my girls were 6 and 10 at the time..

Stayed in Knife River. 1st day drove all the way to the Canadian border, hiked the Pigeon river, and worked our way back south.

Can't beat the Black Hills though either..

Rivers on a house boat is pretty slick in nice weather. I like them big and with A/C. No place to be because your already there

Exploring, cruising, short hikes while land-side and just drifting about covers it unless you also fish.
