What are you guys running for a smoker? I’ve smoked a few times on my Weber grill with results that’s were satisfactory for me and the misses. I would like to get an off set style so I could do bigger slabs like a full brisket. Here’s a pic of some boneless ribs I did. (Wife won’t eat meat off the bone)
I have had two in the works for 10 years, lol! I need to finish one but a friend and fellow Vol for Life runs a BBQ food truck in Knoxville. He just upgraded and now needs more wood. I may have something worked out for a 7x12 dump trailer of split hickory for his old smoker. It’s built well and works great, but his new one is a beast!

I am betting that boy has a belly. Anyone that has that much passion and investment into something, likes GOOD food. And not fruits and veggies. Although some of them turn out very well in the smoker. I am impressed and jealous.
I was gifted a smoker the other day. A brinkman brand offset smoker. Now I can get serious with this hobby. I know it’s no $1000 pro built one, but hey, it was free. Shows little sign of use and not rusted at all. Now what should I smoke first?
I use a master built MES 40. And an amaz-n-smoker. It's convenient and consistent. People will talk smack about electric, and it is totally cheating, but I can turn out barbecue at least as good or better than the next guy and have it ready for brunch with Mimosas while not losing sleep. The only problem I have is I get asked to do events and parties and I'm limited to about 40 people.
Tbh the wifi connectivity and two meat probes that all can be monitored from the phone make a fella look like a good cook.
