IMG_5728.jpegThis is my solution to the Pitboss giving me issues. Tonight it got to temp in 16 minutes. Honestly I think it has menopause but I’m going to beat it. 16 pound prime brisket with mustard binder and my go to seasoning called the shakedown. Time for it to just absorb the smoke and heat at 200 degrees till morning. Bark should be set when I get up. Then wrapped in foil and back on at 250 till it hits 195. That is where I begin to check for tenderness. I rarely go over 200 internal temp as my rests are long and produce great results
