The planets have aligned. This past Thanksgiving sales bonanza I ordered 3 packs of Hog Sausage casings. Cabelas sent me 6, and told me just to keep the extra 3. Whooohoooo!!!
I found 12lbs of Elk burger (from an Elk harvested in year '23) deep in the freezer yesterday, let it thaw out, and mixed up some breakfast maple sausage seasoning. I fried a small patty for a taste test and the sausages are in process. Probably several years since I made sausages. They are the best.
