Slabs will almost always have stress.
The most stable boards will be the ones with vertical grain”quarter dawn”
Slabs run the gamut of the log and usually have to be “leveled” and sealed up good after dry.
With me, it’s all about the yield of usable product. If a 1200 pound steer can hang at 800, that would be a huge win. The guys at the feed yards have upped their target weights to send to the meat packers. Last I heard they were sending 1500-1600 pound steers. Instead of 1250-1400.. more usable...
I got a wagyu KC strip once just to try it.
It was good, but a little bit of a let down from my expectations.
I still prefer a good crossbred steer on feed for an ample amount of time.
The very best steer I’ve fed out to date was over 20 months old and almost 1600 lbs.

That cover seals into its base and is most likely just stuck..
