Cold smoking shouldn't be a problem right now, if you can keep the meat from freezing.
That bacon looks damn good.

Yes it was cold here today 28. But with the temp in the smoker was about perfect for smoking on the porch with the pellet tube going.

Smoked Cream cheese bacon wrapped jalepeno poppers and spare ribs all on treager some fresh colllards with a ham hock home made corn bread pics in a bit still waiting on ribs and poppers got a late start today

Super! That looks like a perfect skillet of corn bread. Sure would be good with some butter and molasses!

I like it with buttwr and raw honey too

We either had honey or a little light Karo syrup and a big hunk of butter.
With a bowl of vegetable soup or Ham & beans, ain't nothing better.

I was born and raised on corn bread and Molasses. Very hard to beat I think! Had a lot of white beans to go along with them also. ( with biscuits )

Taste pretty good to me! I love bacon! Got it sliced up today, since it is to cold to do anything else.

My wife has been looking at pics of the bacon that Charlie, @amberg, has been making and has been bugging me to make some.
I explained the curing/cold smoke process and she showed up yesterday with these and a 20lb bag of Applewood pellets.
Time to get some cure and get busy.

Made a couple New York strips tonight that had to be close to 1-1/2” thick. This was the first time I felt the need to use the meat thermometer that my wife got me for Christmas.

Smokin' Tubes...the end opposite of the open end is capped, fill the tube with smoking pellets then hit it with a small torch to get 'em going, once the fire is out and it's smoking, lay it in the bottom of the grill on the charcoal rack or even on the food rack, or can be used to supplement and add more smoke to an existing smoker with chip or chunk trays/holders. They come in square, round, oval or octagonal fashion...I prefer the square so it doesn't start rolling around on the grate when you're in and out of the grill/smoker. These things basically turn any grill whether gas or charcoal, into a smoker. With the 12" smokin' tube pictured above, loaded can get about 3-5 hrs of smoke time depending on outdoor temp, wind, etc out of it, then reload with pellets if necessary. Could probably use smoking chips packed pretty tight so they touch each other and still catch and smoke as well, just haven't tried any chips yet.

So are you cooking with the pellets only, or are you cooking with gas/propane and the pellets are just for smoke?
