Looks fine Charlie!Got these started yesterday at 9 am was after 10 pm before they were finally done. Also made up five lbs. of Chorizo, five lbs. of sweet Italian and stuffed them, plus five lbs. of fresh breakfast sausage not shone. Made for a long day for this old cripple!
Seasoned rack of spare ribs going indirect on the Weber Performer with charcoal holders either side here directly...rack rubbed down with yellow mustard first, then hit with a little Goya Adobo seasoning, Fiesta Rib Rub seasoning and finished with Blues Hog seasoning and a shake of crushed red pepper to boot. Gonna sling some Sweet Baby Ray’s Sweet & Spicy on ‘em at the end.
And my Dawgs gonna whip some Gator ass in Gainesville, Fla at 3:30 today!
