Four more hours on smoke today, with apple and hickory, looking damn good!! About one more week to go with the smoke. ( aka, about 16 to 24 more hours of cold smoke ) I do love cured bacon!! Hmmm, hmmm, good!!

All I got after the smoke, The end pieces and the fat, Plus about 14# of the good stuff! I hope to be making some fresh sausage in a couple days. Should be about 12# I hope.

100_2093.JPG Seasoned up 10# of fresh breakfast sausage yesterday, Tastes pretty damn good I think! Hmmm! Morning is ah coming!! bacon, sausage, fried eggs,with fried new taters, pancakes, grits, with toast and grape jelly! And milk to wash it down with.

If I ate all of that for breakfast, I'd have to take a nap and the day would be shot.

Not really! I just like breakfast. I had to do a double this morning, as the girls had to take tests at the local college. before she goes back this week. I had two of these plates this morning, ( still missed my fried potatoes and grits! )

Not really! I just like breakfast. I had to do a double this morning, as the girls had to take tests at the local college. before she goes back this week. I had two of these plates this morning, ( still missed my fried potatoes and grits! )

Apple butter, another wonderful thing I enjoy. There are quite a few makers here in Norf Caroliner!

As a boy I remember putting apple butter on a hot (cat-head) home made biscuit with butter.
Yes, we had home made biscuits in those days with our breakfast. Loving even the memory of that! :D

Thanks. Steve, got to love bacon! As I eat about 12 to 18 pieces everyday. with eggs and toast! with homemade apple butter! hmmmm!

It turned out ok, but I think it could have been better. Think it needed more smoke, or more seasoning, not sure yet, ( As I like cured meat ) I have never smoked a lion before. Usually make sausage with them. But the crock pot barbecue turned out damn good I think.

Hmmm, Not sure, It taste damn good. But yes I think it was to dry. Not sure if I will smoke a lion again.

Looks a little dry to me, but I am not to sure yet, as it is damn good! ( open for info. ) Maybe some more pepper, and garlic.

Pork Loin is a very lean meat and hard to keep from drying out.
A 12 hour soak in a simple brine helps a lot.
Tenderloins are much easier.

I have brine recipe, but it is for cured meat. aka. 14 days at min. Guess I can use poultry brine recipe for 24 hours.
