Egg Plant Lasagna.
I spent the day cutting wood and was hoping for something good.
I hope it tastes better than it sounds.

Well... I love eggplant, but it’s often undercooked, then I don’t like it.
In lasagna I would fry it first.

I think she drizzled it with Olive oil and baked it first.
We'll see how it turns out. Should be ready to eat in about 20 minutes.

I’m not a cook, I just know I like eggplant when it’s cooked good. Baking may be perfect!

The Eggplant Lasagna was better than I expected.
Flavor was very good. Texture, not so much.
I think the next time, she's going to cook it longer.
It definitely has potential....
