A late thought on the liver. If you are only after the health benefits then why not just grind it into the sausage? Low percentage wouldn't adversely affect the flavor or texture. All the benefits with none of the misery.

I thought I got a video of the exchange for those that wanted to see it. Must have bumped the screen when I flipped it around because all I got was 3 seconds of my hand fumbling around. Maybe somebody else got it.

All my pork cuts go to the grill or the smoker but you can ruin em there too. I f you are getting dry & tough it always goes back to time & temperature. Too much of either will ruin em. Not just the ladies either. Know lots of guys can't cook for nothin. Seems like you get it or you don't.
Speaking from my own experience, fat guy ballast is pretty useless. Little bastards are really tippy. Usually have the backhoe on mine. Big chunk of steel out back.
