I cooked this earlier today. I'm going to break it down, vacuum pack and freeze for future use. Now that the holidays are over, Turkey is cheap. This was a 21lb
Butterball that the local grocery store had for $.68lb.

Will this be ground and put into links or just loose so it can be pattied out?

I did do a few links, but I like the 2# LEM packs better for breakfast sausage to make patties with, As I just finished stuffing it. I prefer the patties. A couple of the sausage links here with some bacon I just cooked for my breakfast in the morning.

I thought I had the only wood heater like that, traded the one I had for a recirculator model, even had the wire mess frame to replace the door with so you could see the fire. Those do put off a lot of heat with an 8" pipe.

Yep I've got that mesh screen too. It does pretty well just burns tons of wood

That it does, it was just too big for our house back in the early 90's, would run you out if ya didn't get it regulated correctly. I like the recirculator type better, less chance of getting burned from laying against it plus it burns less wood and I can regulate it better.
